Apple and carrot are both low fat and a great combination.
Carrot cake is delicious – and generally comes loaded with butter and sugar. Moist yes, calorie friendly no. So I’ve been experimenting around the basic ‘Free or Almost’ recipes, and came up with this.
Fat free, dairy-free, sugar-free and gluten free, the moist and firm texture means this can stand alone without any need of garnishes such as cream or custard.
Apple Carrot Low Fat High Flavour
I wish technology was advanced enough to let me attach the aroma of this as it comes out of the oven!
Heat oven to 170ºC
Line a baking dish with parchment paper.
Ingredients and Method
Steam and cool:
º 300g grated carrots
º 200g peeled cored apple.
In a mortar, mush together:
º 1t cinnamon
º 1 thumb size piece of fresh ginger, peeled and sliced
º 7 whole cloves.
Place the apple, carrots and spice mix in a blender and whizz.
º 4 eggs
Pour into the baking dish.
Bake for 25-30 mins. Check carefully, don’t let it overcook.
